Can't believe I finally made it to the weekend (or what equates to my weekend at least). It was an intense week, both at home and work.

At work, we are trying to get our Season of Giving letter out - it should have gone out last month, but because of Ava's incompetence and Dennis's inability to be forceful, the Board has jacked him around to now. The letters are supposed to be signed by everyone on the board, like that will ever happen. He wants them gone by Monday, which I can make happen, but I can't sign everyone's name to them. they have to - talk about herding cats.

At home, we have been waiting for the arrival of a cat door for our sliding glass door. I was hoping it was going to get here before we left today. After many disappointments on Monday and Tuesday, finally it arrived late Wednesday night and TBG installed it yesterday. It's perfect and the cats already seem very comfortable with it. Best of all, it seals so we aren't letting a bunch of cold air in. TBG moved the alarm head, so we can alarm the place and that makes me much happier.

We have also been working on the Christmas baking, which is fine, but after work, it felt as if I hit the ground running as soon as I walked in the door until I tumbled into bed. However, yesterday I came home and TBG was just cleaning up after finishing baking the last batch of cookies. So, so relieved. We did 48 mini rum cakes, 14 mini lemon pecan cakes, 13 fruitcakes, five dozen pine nut cookies and four and a half dozen double ginger cookies. Now I just have to pick up candy canes and chocolate kisses for our plates. Yay! That's next week.

Today we leave for a weekend in the Foothills and I couldn't be happy. Well, I'd be happier if my ears would unplug (sinus infection), but wth... it will be a fun weekend of food, shopping and friends. And I don't have to come home to decorate a Christmas tree, since we got ours early. I think I won't have a problem convincing TBG to do this again next year...

I will try to check in when I can. We aren't leaving until noon, so after that, I'll probably go MIA for a bit. If I don't connect with everyone, have a fabulous and fun weekend. Remember to do something nice for yourself, even if it's just a bath and a glass of wine to relax tonight.

You ask and I deliver

Lemon Pecan Bread

1/3 cup melted and cooled butter
1 cup sugar
3 T. lemon extract
2 large eggs
Zest(grated peel) of one lemon (reserve juice)
1 ½ cups flour
1 t. salt
1 t. baking powder
½ cup milk
½ cup pecans

Preheat oven to 350
Butter standard loaf pan and line bottom with waxed paper. Mix first five ingredients. Stir together ingredients and them add to sugar-butter mixture. Add milk and stir to combine. Fold in pecans. Do not over mix.
Pour into loaf pan and bake for 50-55 minutes

Topping ingredients
Reserved juice
½ cup powdered sugar
Combine juice from lemon with powdered sugar. After removing the loaf from pan, pour lemon juice mixture over warm loaf slowly until all of it has soaked into the bread. Wrap loaf in plastic wrap
Makes 12-15 servings
