At least I have the answer to my question.

When I was growing up back in Vermont, I didn't know you had to chew cooked vegetables. My mum was a good cook, but she always cooked vegetables until they were mush.

I have been reading her Fanny Farmer Cook Book and I think I found the answer. My first hint was when I saw the recommended time for a hard boiled egg as 38 minutes...



This explains so much...
