Last night I tried a new chicken dish and it was fabulous, but, hell, you make it with heavy cream and butter - what's not to love? 1 1/2 cups of heavy cream and the juice of a medium lemon, mixed together and set aside, then you brown 3/4 pd of sliced mushrooms, then a sliced onion and garlic (to taste). Remove them from the pan and brown your floured chicken pieces (I use boneless thighs), then removed the chicken, deglaze with a cup of chicken broth. Add everything back and cook for five minutes, then add the whipping cream and warm. Finally add a cup of frozen peas and cook until they are warm (I microwaved them first). Whole thing took about twenty minutes and that was mostly the chopping. They suggested serving it over rice pilaf, I used pasta,then sauce was thick enough for it. Too good by half. I will be making it again.
Anyhow, we will see what happens. I am hoping for a smooth drive... and I think Fred is coming with us. :D
