Emma’s Easy Skillet Pork Chops with Sweet Potatoes
8 pork chops
Salt and pepper to taste
2 T. oil
1 ½ medium onions, julienned
1 T. Flour
1/8 t ground all spice
1 cup chicken stock
½ C. apple juice
2 cups peeled and cubed sweet potatoes
Season pork chops with salt and pepper.
Heat a skillet and add oil. Fry pork chops on both sides for 4 to 5 minutes. Remove from pan.
Add onions and sauté over medium heat until caramelized.
Add floor and allspice, the stir for one minute.
Add chicken stock, apple juice, sweet potatoes and stir, then return pork chops to pan.
Cover and simmer for 25 minutes.
We reduce the number of pork chops to 3 and use boneless, but keep everything else the same.
It never disappoints.
