What was I thinking.

Do you ever come across a recipe and you think, this could go either way. Usually, I never make a dish for friends until I've tried it myself. This time I didn't and should have. WE won't be doing this again.



First we woven five strips of bacon  with five strips of bacon and baked it for 20 minutes at 400 degrees.  It registered 170 when we took it out, so the bacon is cooked, but still looks raw. 

You add a layer of mayo


Then chopped tomatoes and avocados

cover it all with lettuce

and roll

We stored it like this for a few hours to help it keepit shape.

Sliced.  It tastes like a very concentrated BLT.  Too much bacon for me, though, and you see what I mean about the bacon still looking raw.


On the other hand, the peach cobbler was a success.
